HOMEMADE FRESH TOMATO SAUCE RECIPE

Simple ingredients make this tomato sauce fresh, clean, loaded with nutrients and amazingly full of flavor. Tomatoes are considered both a fruit and a vegetable and are an integral ingredient in so many special dishes around the globe, especially in the Mediterranean region.

INGREDIENTS FOR TOMATO SAUCE: Makes 3-4 cups

  • 2 tablespoons extra virgin olive oil

  • ½ chopped medium sized organic onion finely chopped

  • 2 cloves garlic finely chopped

  • 7 large organic roma tomatoes

  • ¼ cup red wine (optional)

  • ¼ teaspoon fresh basil finely chopped

  • 2 teaspoons organic dried oregano

  • ¼ teaspoon ground pepper

PREP: 30 minutes

  1. In a medium pot, bring water to a boil. On the side, have a bowl of ice water ready for your tomatoes. Add tomatoes to boiling water for 1 minute or until the skin begins to peel. Quickly remove and add to ice water. Carefully peel the skin off of the tomatoes and blend tomatoes in a food processor or chop by hand for a chunkier alternative.

  2. In a large pan, heat oil over medium heat. Once the oil begins to simmer, add onion, garlic, basil, and dried oregano (and red wine if wanted). Stir until flavors are combined. Make sure not to let the garlic burn. 

  3. Add tomatoes and crush down any large pieces with a fork. Cook uncovered for 30 minutes to an hour.  Add additional chopped basil and/or pepper to taste. 

  4. Refrigerate for up to one week or freeze any extra.
