NO-MAYO TUNA SALAD RECIPE

Full of flavor & mayo-free! This healthy, light and delicious tuna salad is high in protein and fiber, nutrients and so easy to make. Freshly squeezed lemon, basil, parsley and chickpeas (amazing source of protein and fiber!) make this an entire meal or the perfect snack. Add to sprouted bread to make a sandwich, roll with lettuce leaves or eat as a snack with cucumber slices. 

INGREDIENTS: 

  • 1 can light tuna in water (no salt version) drained

  • 1 tablespoon fresh lemon juice

  • ¼ cup organic yellow bell peppers, chopped finely

  • ¼ cup organic cucumber, chopped finely

  • 2 tablespoons fresh basil, chopped finely

  • 2 tablespoons fresh organic parsley, chopped finely

  • ¼ cup organic garbanzo beans (no salt version) drained

  • Black pepper to season

OPTIONAL: 

  • ½ - 1 teaspoon organic jalapeños, chopped extremely finely 

  • ¼ cup red onion, sliced thinly

PREP: 

In a large bowl, add tuna fish and use a fork to separate well. Then add the remaining ingredients and mix until well combined. Enjoy immediately.
